Within 48 hours of harvest, each trout is hand-filleted to begin a transformative 14-day dry-aging journey. This meticulous process enhances the trout's natural flavors, intensifies its richness, and refines its texture to create a fillet like no other.
Each fillet is portioned between 120g and 140g—perfectly sized for crafting unforgettable meals.
