Within 48 hours of harvest, each trout is hand-filleted to begin a transformative 14-day dry-aging journey. This meticulous process enhances the trout's natural flavors, intensifies its richness, and refines its texture to create a fillet like no other.

Each fillet is portioned between 120g and 140g—perfectly sized for crafting unforgettable meals.

Our steelhead trout comes exclusively from Kames, a small family-run farm located on the west coast of Scotland and currently operated by the second generation of farmers. The steelhead trout is a species that grows strong and athletic, much like salmon, resulting in lean and flavorful meat.This farm works in the most natural way, taking exceptional care of their fish and the surrounding waters and seabeds. Their commitment to sustainable practices ensures not only the health of the trout but also the preservation of the pristine environment they inhabit.

UK (excluding Scottish Highlands and Islands):
Delivery is free of charge for selected postcodes in London Zone 1, and when you order products worth over £100 (including any applied discount codes). For all other UK postcodes and orders below £100, we offer delivery via DPD at a flat fee of £8.90.

Northern Ireland:
We offer next day delivery service to Northern Ireland via DPD at a flat fee of £31.90.

Scottish Islands:
For delivery to the Scottish Islands, we offer a 2-day delivery service via DPD at a flat fee of £24.90.

Scottish Highlands:
For delivery to the Scottish Highlands, we offer a 2-day delivery service via DPD at a flat fee of £14.90.

We offer next day delivery service to the Channel Isles via DPD at a flat fee of £31.90.

The dry ager basically remove all extra moisture in
the fish, extending its natural shelf life. This process provides a
minimum shelf life of 7 days, giving you plenty of time to enjoy our dry
aged salmon.
