When you want a quick snack that feels fresh, satisfying and a little different, a sushi sandwich is a great one to make. It has all the flavours you’d expect from sushi, but it’s much easier to put together: no rolling, no mat, just a sheet of nori folded into a neat little square.
For this version, we’re using our whisky and soy smoked salmon, which brings a rich, savoury flavour to the filling. Paired with sushi rice, cucumber, Kewpie mayo, wasabi and sesame seeds, it makes a fresh, compact snack that’s full of flavour.

Ingredients for 1 sushi sandwich
- 5 slices of Smokin’ Brothers Whisky&Soy smoked salmon
- 1 sheet of nori
- 50–60g sushi rice
- A few thin slices of cucumber
- Kewpie mayo
- Wasabi

Method
1. Cook the sushi rice according to the packet instructions, then leave it to cool slightly.
2. Slice the cucumber very thinly lengthways. A vegetable peeler works well for this, as it gives you long, even ribbons.
3. Place the nori sheet on a chopping board. Make one cut from the middle of one edge to the centre of the sheet.
4. Imagine the nori divided into four equal squares. Add a different filling to each section:
* Kewpie mayo and a little wasabi in one section
* sushi rice with sesame seeds in another
* slices of whisky and soy smoked salmon in the third
* cucumber ribbons in the last one
5. Starting from the cut edge, fold the first section over the next one. Then keep folding, one section at a time, until you have a compact square.
6. Press it down gently with your hands to help it hold together. Slice in half if you like, or eat it as it is.
