Crispy Sushi Cups with Whisky&Soy Smoked Salmon

There are recipes that win you over at first bite, even before they catch your eye - and crispy sushi cups are definitely one of them. They have a crunchy base, a fresh and creamy filling, and all the character of Whisky&Soy smoked salmon, which pairs beautifully here with avocado, spring onion, and carrot.

The combination of nori, sushi rice, and whisky&soy smoked salmon recalls the flavours of Japanese cuisine in a more immediate and convivial way. Ingredients (for 12 pieces)

  • 200 g of Whisky&Soy smoked salmon
  • 3 sheets of nori
  • 3 rice paper sheets
  • 250 g of cooked sushi rice
  • 1 avocado
  • 1 spring onion
  • 1/2 carrot
  • sesame seeds, to taste


Method

  1. First, sprinkle the nori sheets with sesame seeds. Then lightly soak the rice paper for a few seconds in a plate with a little water and place it over the nori, pressing gently so it sticks well.

  2. Next, cut each sheet into 4 equal parts and place each square into a small mould or cup, shaping it into a concave form. Microwave for about 1 minute, or until the shells become nice and crispy.

  3. Meanwhile, prepare the filling: cut the avocado into small pieces, slice the spring onion thinkly, and julienne the carrot.

  4. Once the shells are ready, let them cool slightly, then fill them with a little sushi rice, 1 or 2 slices of smoked salmon, avocado, spring onion, and carrot.

  5. Finish with a sprinkle of sesame seeds and serve immediately. The result is a fresh, crispy, and well-balanced bite.
