  • 100 g Smokin Brothers smoked salmon

  • 7 yellow cherry tomatoes

  • Extra virgin olive oil, to taste
  • Salt and pepper, to taste
  • Agave syrup, to taste
  • Gomasio, to taste


Method

  1. Start with the star vegetable of the dish: the Maurice tomato. Slice it into medium-thick rounds and arrange them on your serving plate to create a wide, neat, and visually appealing base.

  2. Cut the avocado in half, remove the pit, and slice it thinly. Place the slices in small groups over the tomato—this helps create movement and adds depth to the dish.

  3. Add a handful of your favourite salad leaves in the centre to build height. Then scatter the halved yellow cherry tomatoes evenly across the plate for a nice colour contrast.
