Post-Workout Quinoa Bowl with Smoked Salmon

After a workout, some days call for something light, high in protein and easy to put together. This quinoa bowl is exactly that: simple ingredients, plenty of colour and a good balance of freshness, flavour and substance.

The star of the bowl is our Smokin’ Brothers smoked salmon tail cut, the highest-protein cut in our range. It works perfectly in a post-workout bowl with quinoa, boiled egg, avocado, fresh vegetables and a simple lemon and extra virgin olive oil dressing.

Ingredients for 1 bowl

  • 100g Smokin’ Brothers smoked salmon, tail cut
  • 125g cooked quinoa
  • 1 boiled egg
  • ½ avocado
  • A handful of cherry tomatoes
  • Cucumber
  • A handful of fresh spinach
  • Lemon juice
  • Extra virgin olive oil

 

Method

  1. Cook the quinoa according to the packet instructions, then leave it to cool slightly.
  2. In the meantime, boil the egg. Once ready, cool it down, peel it and cut it in half.
  3. Wash and slice the cherry tomatoes. Slice the cucumber too — we recommend removing the watery centre so the bowl stays fresh and crunchy.
  4. Cut the avocado into strips.
  5. Now build your bowl: start with the quinoa, then add the fresh spinach, cherry tomatoes, avocado, cucumber and boiled egg.
  6. Finish with the Smokin’ Brothers smoked salmon tail cut.
  7. Dress with a drizzle of extra virgin olive oil, a squeeze of lemon juice and, if you like, a crack of black pepper.
