Ingredients (Makes 1 calzone)
- 100g Smokin’ Brothers smoked salmon tail cut
- 4 eggs
- 2 tbsp double cream
- 1 shallot
- 100ml chopped tomatoes
- 2 tbsp extra virgin olive oil
- 125g mozzarella
- Salt, to taste
- Black pepper, to taste
- Turmeric, oregano and basil, optional
- 1 garlic clove
Method
1. Crack the eggs into a bowl and whisk lightly. Add the double cream, salt, black pepper and, if you like, a little turmeric. Mix well and set aside.
2. Finely chop the shallot and garlic. If you like, you can also add a little fresh oregano at this stage.
3. In a frying pan, gently cook the shallot, garlic and oregano with a drizzle of extra virgin olive oil. Add the chopped tomatoes and cook until the sauce becomes thick and full of flavour.
4. In a second pan, heat a little oil, pour in the egg mixture and cook the omelette on both sides until set.
5. Once ready, spoon the tomato sauce onto one half of the omelette, then add slices of mozzarella and the smoked salmon. Fold the omelette over itself like a calzone.
6. Serve with a few basil leaves, if you like, and finish with a few slices of smoked salmon on top for a fresh contrast against the warm filling inside.
