In our smokehouse, we carry out a little alchemy of our own — creating smoked salmon with the richest colour and most enchanting flavour, perfect for your Halloween spread.
Here’s how to make three different seriously spooky canapés.
Ingredients
- 200g Smokin’ Brothers Belly Cut

- Dark or seeded rye bread or pumpernickel
- 1 bag mini mozzarella balls
- 250g cream cheese
- 1 punnet of physalises
- 1 Pomegranate
- Green pitted olives stuffed with peppers
- Dill
Preparation:
- Cut the bread into canapé-sized circles using small cookie cutters.
- Cut the olives in half widthways to create the appearance of eyes.
- Remove the seeds from the pomegranate.
Canapé 1, with Cream Cheese
- Spread some cream cheese on a piece of canapé bread.
- Add a slice of smoked salmon on top of it.
- Use your hands to roll some more cream cheese into a ball.
- Put one half of an olive on top of the ball to look like an eye.
- Place the ‘eye’ on top of the canapé, and garnish with some dill.
Canapé 2, with Mozzarella
- Take a smaller canapé slice and spread some cream cheese on top.
- Get a ball of mini mozzarella and push a pomegranate seed into the top of it.
- Take a slice of salmon and wrap it around the mozzarella ball.
- Use the pomegranate juice (blood) to stain some tooth picks, and use them to secure the salmon.
- Place the ball onto the canapé, and garnish with some pepper.
 
Canapé 3, with Physalis
- Unwrap the physalis slightly so that there is space between the fruit and the shell.
- Cut a small cross into the top of the fruit and insert a pomegranate seed.
- Take a slice of salmon and wrap it around the fruit.
