Smoked salmon tartare - raw salmon has never tasted so good

The origins of smoked salmon tartare are thought to trace back to France, where in Paris in the early 1980’s Chef Gilbert LeCoze prepared tartares of salmon and whitefish. Chef LeCoze later brought these recipes with him to New York City when he opened Le Bernardin, taking seafood tartare international.

While in our opinion one never needs an excuse to enjoy a classic - and delectable - smoked salmon tartare, St Valentine’s Day serves an opportune occasion to enjoy this fine and delicate dish.

Here is our recipe for the best smoked salmon tartare around - Smokin’ Brothers  style:


  1. Smokin Brothers smoked salmon 200g
  2. 1/2 small shallot
  3. 1/4 lemon zest
  4. Generous pinch of either fresh black or white pepper, depending on your preference
  5. Extra virgin olive oil 
  6. 1 tsp of - preferably - homemade mayonnaise (the Smokin’ Brothers team love this recipe!)
  7. 10g whole grain mustard 
  8. 1 tsp of fresh chives
  9. 1/2 tsp of fresh dill


  1. Prepare the salmon by dicing the fillet into small cubes
  2. Finely chop the shallots, chives and dill
  3. Finely grate the lemon rind
  4. Add the salmon cubes, chopped shallot, chives, dill, and lemon zest into a bowl
  5. Season with a glug of extra virgin olive oil, a dollop of whole grain mustard and a generous spoon of your homemade mayonnaise
  6. Mix everything together so the salmon cubes are evenly coated in the mixture
  7. Bonus step: use a mould to give the salmon tartare an elevated shape

Et voila!
