Ingredients (serves 2):
- 100 g Smokin’ Brothers smoked salmon
- 100 g mixed salad greens
- 1 cooked beetroot, thinly sliced
- 1 shallot, finely chopped
- 150 g caperberries
For the dressing:
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- ½ tsp honey
- 1 tbsp extra virgin olive oil
Method:
- In a small bowl, whisk together the mustard, vinegar, honey, and olive oil until smooth and emulsified.
- In a large mixing bowl, combine the greens, beetroot slices, chopped shallot, and caperberries.
- Drizzle over the dressing, toss gently, and plate. Finish with generous slices of Smokin’ Brothers smoked salmon.
