Smoked Salmon, Asparagus and Parmesan Muffins

These savoury muffins are the kind of recipe that work for almost any occasion. Warm, golden and generously filled, they bring together smoked salmon, asparagus and parmesan in a way that feels both comforting and refined. They are easy to prepare, easy to serve, and ideal when you want something a little special for a starter, brunch table or aperitivo with friends.

As with many simple recipes, the beauty is in the ingredients. Asparagus has many health benefits and it is especially well suited to this kind of bake, bringing freshness, structure and a slight sweetness that pairs beautifully with richer flavours like cheese and smoked salmon. 

In this recipe, the richness of the cream cheese, parmesan and puff pastry is balanced by the freshness of the asparagus and dill, while our Smokin’ Brothers smoked salmon adds softness, depth and a beautifully buttery texture. It is a cut that works particularly well in baking, where its delicate smokiness can melt into the filling without getting lost among the other ingredients.

 

Ingredients (Makes 8 muffins)

  • 200g Smokin’ Brothers smoked salmon belly
  • 100g cream cheese
  • 1 egg
  • 200g grated parmesan
  • 200g green asparagus
  • 1 sheet of puff pastry
  • A knob of butter
  • A handful of dill
  • Salt, to taste
  • Black pepper, to taste


Method

  1. In a bowl, whisk the egg with the cream cheese until smooth. Add the grated parmesan, the asparagus cut into small pieces, the smoked salmon belly cut into cubes, the dill, salt and black pepper. Keep a few slices of smoked salmon aside for decoration, then mix everything together.
  2. Butter a muffin tin. Cut the puff pastry into 8 rectangles and place each one into the muffin moulds, pressing gently so they fit neatly.
  3. Spoon in the filling, then gently fold the pastry inwards. Finish with a little extra parmesan on top.
  4. Bake in a conventional oven at 200°C for 20–25 minutes, until golden and cooked through.
  5. To finish, decorate each muffin with a slice of smoked salmon and a small sprig of dill, if you like.
