Miso French Toast with Smoked Trout

French toast doesn’t always have to be sweet. In this version, it becomes savoury, soft, slightly salty and super creamy thanks to white miso, eggs, milk and crème fraîche.

The best thing about French toast is how simple it is: all you need is a couple of slices of bread and a creamy mixture to soak them in before cooking. We usually think of it with sugar, maple syrup or fruit, but a savoury version is just as good and works beautifully with richer, more flavourful toppings.

Here, the miso takes the place of the sweetness and gives the bread a deeper, almost umami flavour, without overpowering the other ingredients. Once cooked in a pan with butter and oil, the bread turns golden and lightly crisp on the outside, while staying soft and creamy in the middle.

The result is a slice of bread that’s golden on the outside and soft inside, finished with our smoked trout, fresh watercress, lime and black pepper. Perfect for a slightly different kind of brunch.

 

Ingredients for 2 French toasts:

  • 100g smoked trout
  • 2 slices of bread, whichever you prefer
  • 25g white miso
  • 2 large eggs
  • 40g crème fraîche
  • 60ml whole milk
  • 1 bag of watercress
  • 20g butter
  • 1 tbsp sunflower oil
  • lime
  • black pepper


Method:

1. Start by finely chopping about 20g of watercress and placing it in a bowl.

2. Add the eggs, white miso, crème fraîche and milk. Mix well until smooth and creamy.

3. Place the slices of bread in a large dish and pour the mixture over them. Let them soak for a couple of minutes, then gently turn them over so they absorb the mixture on both sides.

4. Heat the sunflower oil and butter in a pan. Once the butter has melted, add one slice of bread at a time.

5. Cook until golden on both sides. The outside should be crisp, while the inside stays soft.

6. Place the French toast on a plate and top with generous slices of smoked trout.

7. Finish with fresh watercress, a squeeze of lime and a crack of black pepper.
